Steak temperatures in a water bath, and the second variable people ignore
Cooked the same cut at a range of temperatures to stop guessing. Rough guide, and then the part that matters more.
Where the temperatures land
- Around 50C: very rare, quite soft, some people find the texture unpleasantly slack.
- Around 54C: rare. Red throughout, still yielding.
- Around 57C: medium rare, and the most commonly preferred point by a distance.
- Around 60C: medium. Noticeably firmer and juices start being squeezed out.
- Above 65C: the texture changes character entirely as the collagen and proteins behave differently.
The second variable: time
Temperature sets the doneness. Time sets the texture, and that is what people miss. The same steak at the same temperature is a different thing after one hour and after six, because enzymes keep working on the connective tissue. A tender cut goes mushy if left too long; a tougher cut needs the long hold to become good at all.
Rough shape: tender cuts one to three hours, tougher cuts much longer at the same temperature.
The sear is a separate job
The bath does not brown anything. Dry the surface thoroughly, get the pan hotter than feels sensible, and sear briefly. A wet steak steams rather than browns, and this is the single most common disappointment.
Two things worth knowing
- Thickness decides the minimum time, not weight. A thick steak needs longer to reach temperature regardless of how much it weighs.
- Chilling in ice water before searing lets you sear harder without overcooking the inside, which is the trick that makes a home sear look professional.

The dry surface is the whole sear. Straight out of the bag it is wet, and wet means steam, and steam means grey.
What works: out of the bag, pat dry properly, then leave it uncovered on a rack for ten minutes if you can. Then a pan that is genuinely smoking, a very short time per side, and do not move it.
The ice bath step in the post is the upgrade. Chilling the outside means you can sear for longer without the inside climbing, and that is where the proper crust comes from.
