One pan for a studio kitchen — cast iron, carbon steel or stainless?

I have one drawer of storage, an electric coil hob and a nonstick that's visibly peeling, so that one is going in the bin this week. Budget is about £60 and I can genuinely only keep one pan. Realistically I cook eggs five mornings a week, a steak on Saturdays, and a tomato sauce twice a week. Which of the three survives that mix without me hating it?

    Numbers, because weight matters more than people admit in a small kitchen. My 10 inch cast iron is 2.4 kg on the kitchen scale, the 26 cm carbon steel is about 1.5 kg, the tri-ply is 1.2 kg. On a coil hob there's a second factor: the element cycles on and off rather than holding a steady output, so heavy pans smooth that out and thin pans track the cycling and give you a sear that comes and goes. That pushes me toward the heavier options for the steak specifically.

    I own all three and cook on all three weekly, and your tomato sauce is doing more work in this decision than you think. Seasoning is a polymerised oil layer, and a weekly acidic simmer strips it back faster than you can rebuild it — I watched a good black patina go grey and patchy over one winter of chilli and ragu. For a genuine one-pan kitchen with sauce twice a week, tri-ply stainless is the boring correct answer: it does the steak, it does the sauce, it survives the dishwasher, and eggs are learnable with more fat and lower heat than you think.

      Worth splitting the difference on the acid point. A twenty-minute tomato simmer in a well-established pan is survivable and I do it regularly; a ninety-minute ragu is what actually eats the seasoning. If your sauces are quick ones this is less decisive than it sounds.

      Also depends how old the seasoning is. A six-month pan shrugs off things that would have wrecked it at six weeks.

    Disagreeing with the stainless answer. You said eggs five mornings a week and one steak — that's twenty-something egg cooks a month against four steaks and eight sauces. Seasoned carbon steel does eggs better than stainless ever will, it's light enough to handle one-handed, and it takes the steak fine. Buy a £12 saucepan from a supermarket for the sauce and stop making one pan do a job it's bad at; that's still under your £60.

      This is what I'd do too. The one-pan rule is self-imposed and a cheap saucepan takes up less room than the compromise you'd be making every morning for a year.

    My contribution is the mistake: I bought a 12 inch cast iron for a flat like yours because everyone online loves them. I could not lift it one-handed to tip an omelette out, it didn't fit the drawer, and it lived on the hob as decoration until I gave it away. Whatever you choose, buy it in 24 to 26 cm and pick it up in the shop with one hand first.

    Seasoning is polymerised oil bonded to iron; acid hydrolyses it and heat rebuilds it. Cook sauce weekly and you're in a losing race. Stainless for the mixed workload, carbon steel if eggs are the point.
