Pan sauce breaks every time I whisk in the butter off the heat Troubleshooting
Sear chicken, deglaze with white wine, reduce, then off the heat I whisk in cold cubed butter and it goes greasy and separated about four times out of five. When it works it is glossy and thick and I cannot tell what I did differently. The reduction is maybe a third of a cup by the time I add roughly 40g of butter. Stainless pan, gas hob.

Give yourself insurance. A teaspoon of mustard or a spoonful of cream in the reduction before the butter adds emulsifiers and makes the whole thing much more forgiving of temperature. It is not cheating, it is what half of restaurant pan sauces do.

A tablespoon of cream is my default now. Slightly less pure butter flavour, roughly zero broken sauces.
