Is a pinch of instant yeast in a sourdough loaf cheating, or just a Tuesday?
I work shifts and the only window I reliably get is about six hours from mixing to out of the oven, which my starter alone cannot do in a 21C kitchen. The starter is healthy and I'm not trying to replace it — I'm considering adding a small amount of instant yeast to hit the timeline. What do I actually lose in flavour, and does the loaf stop being sourdough at that point?

I baked the same formula side by side to settle this for myself. At 22C the sourdough-only version needed about nine hours of bulk before it was ready; with a small amount of instant yeast it was there in four and a half. Two housemates preferred the slow one in a blind taste and one couldn't tell them apart at all, and everyone agreed the fast one was perfectly nice bread. Toasted the next morning, honestly nobody could tell.
