Switching a flock to nipple waterers: how the training goes and what winter does to it
Moved four hens off an open drinker. Worth doing, and the two things people worry about are not the two things that matter.
The training is easier than expected
Most birds work it out within a day, and several within minutes. What speeds it up: tap the nipple yourself so a drop forms and hangs, because the shine is what they peck at. One curious bird teaches the rest faster than you can.
Height matters more than training. Set it so a hen reaches slightly upward, roughly at head height when standing normally. Too low and they ignore it; too high and the smaller ones cannot.
Run both for about a week. Remove the open water only once you have watched every bird drink from the new system. This is the step people skip and it is the only real risk in the whole change.
What you actually gain
Water that stays clean. No shavings, no droppings, no algae, no daily scrub. That is the entire benefit and it is a large one.
What winter does
This is the real constraint. Nipples freeze, and a frozen nipple looks exactly like a working one, so birds can be without water for a day before anyone notices. Options: a heated bucket, a small aquarium heater in a reservoir, insulating the line, or accepting that you go back to an open drinker you break the ice on twice a day.
Horizontal rather than vertical nipples if you have a choice. They drip less and they work better with a low-pressure bucket.

Winter decides which system you can run, and the failure mode is the dangerous part: a frozen nipple looks identical to a working one from three metres away.
Two things that help. Put the reservoir somewhere that stays above freezing rather than heating the line, because a heated bucket is far simpler than heated tubing. And check by actually pressing one every morning in cold weather rather than glancing at it, which takes two seconds and is the only reliable test.
