Both are iron, so why does my carbon steel pan behave nothing like my skillet?
I have a Lodge skillet and a De Buyer carbon steel and they feel like different materials in use. The carbon steel is hot in three minutes and loses it the instant a cold steak goes in; the skillet takes forever and then does not care what I put in it. Seasoning behaves differently on each too — the steel goes brown and even, the cast iron goes patchy. Can someone give me the actual metallurgy in plain language rather than the usual 'it just holds heat better'?

The line between the two is carbon content: above roughly 2% carbon by weight you're in cast iron territory, and most cookware cast iron sits somewhere in the 2.5 to 4% range, while carbon steel pans are down around 1% or less. That extra carbon can't all stay dissolved in the iron, so in grey cast iron it comes out as graphite flakes threaded through the metal — and those flakes are why cast iron is brittle and cannot be forged or pressed thin. It has to be poured into a mould, thick. Steel with far less carbon is ductile, so it can be rolled and pressed into a 2 mm pan, and that thickness difference is most of what you feel every morning.

Adding the bit that gets said wrong constantly: cast iron does not hold heat better as a material. Per kilogram the heat capacity of cast iron and steel are close to each other. Your skillet holds more heat because there is simply more metal in it — 2.4 kg against 1.5 kg. Same property, more mass, completely different behaviour.
