Wrap the cloth loosely, not tightly. Koji needs oxygen and a tight bundle at 34C with a water bottle can get anaerobic and sour, which smells like bad cheese rather than nothing.

Finishes and fills — oil, shellac, waterborne, and epoxy for the voids. I've made every mistake with cure times so you don't have to.
If you want a blunt fix while you sort out the real one, a restart policy plus a small startup delay on the proxy service costs nothing and takes five minutes.

So a still jar at pH 4 is normal rather than dead. Does it keep dropping?
Test with a single 40GB file rather than a folder of mixed sizes as a control. Lots of small files over SMB is a protocol overhead problem, not a disk problem, and the fix is different.
Salt matters too. 2 percent is the low end for kraut at room temperature, and 2.25 to 2.5 made mine noticeably less prone to film.
The no-rinsing rule saved my grains. I rinsed once, out of tidiness, and it took three weeks for them to recover.
Seconded. Going from a large old supply to a modest efficient one saved me 15W at idle, which was more than any disk decision.
Been doing this for two years across maybe forty jars and never bought a weight. Also works with a cabbage leaf underneath to catch stray shreds.
