Six hens here and the coherence of the unwashed system is obvious once you have eggs that nobody has processed: they come out with a natural coating, they sit on the counter for weeks, and they are fine.
Wash one and it joins the other system permanently. That is the part people find surprising and it is why the rule about not washing until use exists.
