Spent eleven months blaming my grinder. It was the water.

Half agree. Milk hides the acidity difference, sure. It does not hide the machine dying. Hard water is what kills boilers and it does it quietly over a couple of years, and by the time you notice, the repair costs more than the machine.

So even in the milk case it is still a water decision. Just a maintenance one rather than a flavour one.
