Do not go all the way to distilled on its own. Hollow is a different and worse problem than flat.

Ended up on distilled plus a mineral sachet after two years of buying bottled, and the honest comparison: the taste is the same as the good bottled water, the cost is much lower, and it is completely repeatable.
The reason to do it is not flavour, it is that the variable stops moving. Bottled water changes source and composition without telling you.
