Cold-weather trousers for one bag that are not jeans and do not look like hiking kit

One rule and it decides most of this: no cotton on the outside layer in winter. Cotton is cold once damp and takes forever to dry, and in a one bag setup you have no spare.

Wool or a wool blend solves the smell problem too, which is the actual reason people over-pack trousers. Two pairs of wool goes further than four of anything else, and you can wear one for a week without anyone knowing.
