The split arrangement is the answer and it also makes the nonstick last far longer, because the pan is no longer being asked to sear anything.
Mine does eggs, pancakes and fish. Everything with real heat goes on carbon steel. The nonstick is now three years old and passes the test, where previously I was replacing one a year.
