The middle that has worked for me: contract says the deliverable is a set number of finished images, and unedited files are available at a stated price per shoot if requested in advance.
Two effects. Almost nobody takes it, because the interest was theoretical. And the ones who do are the in-house teams who genuinely need them, who pay without complaint because it was priced and not refused.
The important half is that it is written down before the shoot, so it is never a negotiation on the day.
