Proofing sourdough without a banneton, and the dusting rule that stops it sticking

Cold proofing changes this from a problem to a non-problem, and it improves the bread as well.

A loaf out of the fridge is firm, holds its shape when tipped out, and scores cleanly instead of dragging. A room temperature loaf at the same stage is slack and grabs everything.

It also decouples the bake from the schedule, which is the actual reason most people switch and then never go back.
