I have a 200 day streak in a habit app and my life has not changed - has tracking become the habit?

One thing worth defending, because the answers above are hard on tracking and it does have a real use: the daily minimum is not always a failure.

There is a genuine version of the two-minute day, and it is the one where you would otherwise have done nothing and broken the chain entirely. Showing up badly on a bad day, and returning properly the next, is a real strategy and it is much better than the alternative of missing two days and never restarting.

The difference between that and your situation is frequency. A token day now and then is the system absorbing a bad week. Token days as the default means the measure has replaced the goal.

So before you tear it all down, look back honestly at the two hundred days and count roughly how many were real. If it is most of them and you still feel unchanged, the problem might not be the tracking at all: it might be that the habit you chose does not produce the outcome you wanted, which is a completely different and much more common problem.

Two hundred days of anything substantial usually shows. If it has not, I would question the choice of habit before questioning the system that recorded it.
